Rasgulla is a most popular dessert in among the Indian people. Rasgulla is basically known as Bengali
sweets. Any, occasion, festival, marriages you can easily find this dish in desserts section. So I also thought to make
this dish and share my experience with all my readers.
1 litre- milk full cream milk
2 tablespoon lemon juice
1 cup water
For sugar syrup
1½ cup- sugar
8 cups water
Preparation time – 10-15 minutes
Cook time- 1 hour 10 minutes
Total time- 1 hour 25 minute
Serves: 15 Rasgulla
Method Chenna/paneer balls
Take a big thick bottom pan and put it on a burner and add 1-litre milk.
Now heat it for awhile until it boils and stirs occasionally while boiling.
Then we have to add, lemon juice and stir it well.
Now add more lemon juice and stir until the milk gets to curdles completely.
After that, we have to immediately drain the curdled milk into the handkerchief.
Now pour a cup of water and properly clean the paneer as it has lemon juice in it.
Then bring it together and squeeze the excess of water from in it.
After that hang it for at least 30 minutes or until all the water drains off completely.
Then after 30 minutes, we have to start kneading the paneer properly.
Knead paneer until it turns out smooth without any grains of milk.
Now with help of hands, we make small balls of paneer and keep them aside.
Method For sugar syrup recipe
First of all, take a deep vessel and put 1½ cup of sugar in it,
Now w have to add 8 glasses of water and stir them properly.
Heat the vessel on medium flame and boil the syrup for at least 10-12 minutes to boil a syrup.
Now after that drop the prepared paneer balls into the boiling sugar syrup.
And cover it and boil for at least 15 minutes the paneer balls will have doubled in size.
Now we have to, keep aside until it cools completely and then refrigerate for 2-3 hours.
Finally, Rasgulla recipe is ready to serve and garnished with a pinch of saffron.
